Ancient families and the traditions
There are families in Sicily that preserve and pass down great traditions. The “pupari” (which work with the Sicilian marionette theater Opera dei pupi proclaimed in the UNESCO Intangible Cultural Heritage Lists) and the “sfincionari” who prepare the sfincione, (a kind of pizza made in Palermo) are among these.
Davide Fiore descends from these families. His is not work, but pure passion. At Made in Sud in Bagheria he makes pizzas with the best Italian and Sicilian flours using typical food ad broccoli and sausage, while Salvo Concialdi in the kitchen prepares delicacies such as potato bruschetta and meat rolls or fillet veal slice with pistachio nut sauce.
